Produced in Hygo, Japan the brewery was founded in 1889. It gained national prestige in 1913 when it was chosen as the sake supplier for the Imperial Household – a huge honour in Japan – and it continues to supply sake for imperial ceremonies today. Designed for wine drinkers, its flavour composition fits the pallet of those accustomed to wine but interested in trying something new. Daiginjo No.1 is an easy, everyday style of sake that takes on a modern approach. The sake is youthful, inviting with its delicate apple, honeysuckle and light toasted walnut notes. The moreish palate coats the mouth with sakes signature umami taste, but not too much, just enough to excite the savoury we all crave. Zero sulphites, tannins and 1/3 the acidity of wine. It pairs perfectly with western style grilled salmon or the traditional salmon or tuna nigiri. Enjoy well-chilled in a wine glass.
