Cotswolds Distillery: Established in 2014, this is the first full-scale distillery in the area. They use locally grown barley, which is floor malted, and mature their spirit in first-fill ex-Bourbon barrels and reconditioned red wine casks. Bottled at 46% ABV (700ml)

Nose: Sweet honey, butterscotch, stone fruits (fresh and stewed), and nutty marzipan.

Palate: Oily, lush, and rich with orange marmalade, muscovado sugar, tannins, and a hint of cracked black pepper.

Finish: Treacly with lingering dark red fruit and soft, wooded flavors.
