Mezcalis the name for the family of Mexican alcoholic spirits distilled from various species of the Agave genus, known as Maguey. Tequilais often decribed as a sub-category of mezcal.

Mezcal is produced in nine regions all over Mexico, although most is made inOaxaca. Tequila has a specific zone of production based aroundJalisco, and is only made from a specific variety of the Agave tequiliana species.

Perhaps because of its smoky character, mezcal is traditionally drunk neat, though in recent years various mezcal cocktails have been created. (See below for more on how to drink mezcal). Demand for “artesanal” mezcal might also reflect an association by some drinkers between big-brand Tequila and youthful indiscretions.
