The Hundred Hills Vintage Signature Ros Sparkling Wine was created from small quantities of Pinot Noir from the Winery Bank Vineyard, a site that brings out the greatest intensity from this grape and Chardonnay from the Meadow Woods Vineyard. All grapes were harvested by hand and transported to the winery. After gentle pressing in the Coquard press, the Pinot Noir musts were fermented in stainless steel tanks, and the Chardonnay musts were fermented in Rousseau casks and barrels. A selected yeast strain La Marquise was used and malolactic fermentation was blocked for this wine. The base wines were blended a year after harvest, including five percent red base wine made as a result of the saigne process. The wine then spent eighteen months ageing on the lees prior to disgorgement. Hundred Hills Signature Ros is a fresh and mineral-driven ros from an outstanding Pinot Noir vintage.
